Well, Grenache plays a lot like Pinot Noir the way Sparkman makes it. Medium bodied, refined, bright and complex, which is so very versatile with all manner of delicious food stuffs. The 2017 Wonderland attacks with a nose of wild roses, red raspberry, frais du bois, sandalwood, and cinnamon stick, leading to a panoply of ripe flavors: rhubarb, strawberries, raspberries, Rainier cherries, wild mushrooms, baking spices and vanilla. Not so puzzling after all.

The "umami" is extracted from Katsuobushi (bonito flakes) and while it facilitates beer fermentation, it also adds beer refreshing and fruity tropical flavors. Just in case you’re wondering, this beer doesn't taste like fish!

Brewed with locally-grown heirloom Omachi Sake Rice native to Okayama Prefecture. This perfectly crafted Sake rice lager is dry and crisp, with notes of subtle "Ginjo-like" sweetness arising from the Omachi Sake Rice.

Brewed using the juice and peel of yuzu citrus, this beer is light, refreshing, and perfect for a hot summer's day with a side of buffalo wings. Light bodied with juicy aromas of fresh-cut citrus and bright flavors of yuzu.

Junmai Daiginjo, Nagano | Light pear, green apple rounded with complexity

This junmai daiginjo, brewed from Yamagata prefecture’s Dewasansan rice, is so popular that it’s considered the “backbone” of Tatenokawa Brewing Company. Clean and crisp as a pristine mountain stream, it was inspired by the majesty of Mount Chokai (aka Dewa Fuji), the tallest peak in Yamagata. Refreshing and light, its smoothness and slightly lower ABV also evokes a sense of calm, making it a great pairing for Japanese comfort foods.

Junmai Daiginjo, Yamaguchi | Fruity the aroma and flavor of apple and pear

With its floral nose and mellow fruity flavor, Dewasansan has a wholesome freshness, a green apple tartness and a refreshing finish.

This is a Martini lover's sake: dry and clear with aromatics reminiscent of Tanqueray.

Oka is floral rather than fruity, though there is a touch of pear and melon on the palate.
